Healthy Pumpkin Walnut Bread

Ingredients:
1 cup whole wheat flour
¾ cup all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon salt
2 large eggs
½ cup unsweetened applesauce
¼ cup honey or maple syrup
1 teaspoon vanilla extract
1 cup pumpkin puree (not pumpkin pie filling)
¾ cup chopped walnuts
Instructions:
Preheat Oven: Set your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Dry Ingredients: In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
Wet Ingredients: In a separate bowl, beat the eggs. Then add the applesauce, honey or maple syrup, and vanilla extract, mixing until well combined. Stir in the pumpkin puree.
Combine: Pour the wet ingredients into the dry ingredients. Gently mix together until just combined. Do not overmix.
Add Walnuts: Fold in the chopped walnuts.
Bake: Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
